World-renowned chef, author and Emmy winning television personality Anthony Bourdain visits Granada, Spain, in the next episode of "Anthony Bourdain: Parts Unknown," airing Sunday, September 22, at 9 p.m. ET. Follow the show on Twitter and Facebook.
Granada lies at the foot of the Sierra Nevada mountain range in the southern Spanish region of Andalusia.
The city was the final bastion of the Spanish Moors, before they fell to the Catholic monarchs Ferdinand V and Isabella I in 1492.
"This is where devout Catholicism mixes with surrealism, modernist cuisine with traditional tapas. Christianity and Islam traded places, shared space. And the effects and influences of all those things are right here to see," Anthony Bourdain says.
Yet, there are many parts of Granada's culture that are decidedly Spanish in nature: siestas, bullfighting, Flamenco and, of course, tapas.
According to Bourdain, "You may think you know what a tapa is, like if you’ve had small bites at some fusion hipster bar where they do a whole lot of little plates. Yeah. That ain’t a tapa."
The definition of a tapa has expanded to mean almost anything served in a small portion, but tapas, in the most traditional sense, are small, simple and savory snacks. They're often free of charge so long as you drink - and keep drinking; they're meant to entice you to stick around for a while and ideally order something larger from the menu.
While in Granada, Bourdain feasts on morcilla (blood sausage), berenjenas con miel (fried eggplant drizzled with honey) and caracoles en salsa (snails in almond sauce). And, let's not forget, lots and lots of jamón, the international coup de grâce of country ham.
Another icon of the tapas spread is the tortilla, more specifically the tortilla de patatas or tortilla española; for all intents and purposes, an open-faced potato omelet.

Yields about 4 portions
1 cup olive oil
1 lb Yukon gold potatoes
2 yellow onions, thinly sliced
6 eggs, whole
Salt and pepper to taste
Wash the potatoes under cold running water. Slice in half lengthwise and then into 1/4" half moons. Heat the olive oil in a medium skillet over medium heat and add the onions and potatoes. Stir every so often and season with salt and pepper. Cook for about eight minutes until the potatoes are cooked through and the onions are soft.
Crack the eggs into a large bowl, season with salt and pepper and whisk until they are thoroughly mixed. Using a slotted spoon, scoop the potato and onion mixture into the bowl of eggs, making sure to keep the oil in the skillet, and stir to combine. Reserve the remaining oil left in the pan. It is important to do this while the potatoes are still warm. Cover with plastic wrap and refrigerate for up to three hours.
Heat an 8-inch nonstick pan over medium heat. Add two tablespoons of the reserved oil from cooking the potatoes and onions. Pour the egg, potato and onion mixture into the pan and cook for 3-4 minutes until the sides of the eggs have set and the middle is beginning to set. Place a plate on top of the pan and invert. Gently slide the tortilla back into the pan with the brown side now upward. Cook for another three minutes and remove from the heat. Let the tortilla rest in the pan for four minutes.
To serve, invert the tortilla on to a cutting board and cut into quarters. Place one wedge on each of four plates.
Note: If pressed for time, you can cook the tortilla after refrigerating the mixture for one hour.

Antonio Carmona a Flamenco Spanish guitar player from Spain has many of his song's heard on the radio stations in Spain, and in the United States of America in Miami also in New York as well. What makes Spain and the people a mystery to the rest of the world, how they live laid back lives with a few glass's of red wine and their work ethic, as well where they live to work where the people of Spain are not concerned about how much money they earn because the all mighty dollar does not control there lives as it does like the workers in the USA. Being an American who has traveled to Spain, their way of life is way different where life is one big party for the people of Spain and where family and religion matters to them during the dinner table. The people of Spain live three years longer where the life in the USA goes down, there women and men are always open minded and enjoy talking about their country's economic situation or having some great food and wine in a small café in Spain. As American's we should take a page of the people of Spain, that life is not always about work and being the richest person in the world it's about taking the time to enjoy life and spending time with the people we care about over a few bottles of red wine and food as well for years to come.
Very disappointed with the bull fighting thing. Its a horrible disgusting "activity" that defies human dignity. I'm extremely disappointed with CNN for glorifying this barbaric tradition. Looks like its time for MSNBC! In fact, in an era when we MUST be promoting veganism due to the overpopulation explosion Bourdain should be promoting veggie dishes throughout the series. I was excited at first, but "Parts Unknown" has yet to go to ANY "Parts Unknown". Basically its a cooking show that promotes the killing of animals.
Sad, because this is a huge wasted opportunity – CNN really had a chance to help save the Planet. Given deforestation for both grazing and grain, animal emissions, slaughterhouses, refrigeration and transportation, "animal husbandry" becomes of of our greatest Global Warming problems . but CNN and Bourdain miss a great educational opportunity by promoting the slaughter of animals. How basic, crude and unenlightened!
Bull fighting is the last straw. I have yet to see a true "Parts Unknown" segment. What I really want to see is the matador trampled by the bull. I boycott Spain over this pagan, unenlightened activity that degrades all humanity.
Anthony, you are a great presenter, but where is your heart and vision? You have really wasted a great opportunity and could have become a leader for change that can help save Humankind and the Planet. As for Spain, I want to see the matador die from the same cruelty they perpetrate. There is nothing honorable about killing an exhausted, tortured bull.
Matadors are true cowards – so much for Spanish macho. Spain, your economic woes are your karma for continuing this disgusting tradition.
Bourdain, do a reality check. "Parts Unknown" could have truly enlightened the future of Humankind by promoting new environmentally friendly eating habits. Parts Unknown is a tremendous opportunity lost.
CNN, I will continue watching Piers Morgan, Anderson Cooper, Fareed Zakaria, Sanjay Gupta, etc. but that's it. Other than your responsible presenters, the Spain edition of Parts Unknown has truly changed my viewing habits.

Total fail with the glorification of bullfighting. Many Spaniards are embarrassed by this barbaric atrocity that should be banished to antiquity. Anthony, grow a spine and withhold your applause next time.
He seems conflicted. Bourdain's politics are clearly left, but at the same time, he loves playing with automatic weapons, eating foie gras, and has a well documented dislike of hipsters and vegetarians. He does appear to have changed a little though, as the earlier Bourdain would have gone out of his way to rub bull fighting in the faces of those against it, while this time, he at least made a few hesitent comments about it. Although I don't have a problem with bull fighting, I do agree that it needn't have been in the episode. It's an old Spanish stereotype and has nowhere near the same public following that I had a generation or two ago.

I wish they'd given the recipe for berenjenas con miel (fried eggplant drizzled with honey). I guess I will just have to invent my own...
I made berenjenas con miel just last night. :) Very easy! What I do is I cut thin slices of the eggplant (not too thin, not too thick), and coat *lightly* with flour. (If you put too much, you will taste the flour.) Sometimes I cut the round slices in half to make half moons. Put olive oil in a pan, and fry the eggplants turning once. Once they are out, I place them in paper towels to absorb the oil, and salt while they are warm (I use kosher salt). Once they are all done, transfer to another plate and drizzle with molasses. That is what we call in Spain "miel de caña" or "miel negra", which is not really honey. Hope that heps. Good luck!

I'm not digging the new series. Last night's Spain episode came across as a little forced and unatural. Jerusalem was visually interesting but Bourdain once again shows total deference to anything Muslim. No snarky comments at all when it comes to them.
Have to wonder why you are LOOKING for snarky comments about Muslims. Is it so important to you to see someone put down people?
You have misunderstood my point. Bourdain's whole act is the put down and snark. The point I was making, which appears to have been lost on you, is that he dishes the snark remarks every minute or two when visiting a place, any place, but NEVER ONCE in a muslim country. I'm not suggesting that muslim countries are any more or less deserving of snark than anywhere else. I'm just saying that Bourdain becomes highly respectful and deferential when he visits one.

I have been jonesing for a real tapas bar for AGES. Anthony is right about the hipster fusion thing. Every "tapa" served in the States is some sort of high cuisine, which is not tapas. There is a pretty good tapas place in Sacramento, though, opened by none other than a Spanish guy and his family.
Which are you speaking for? 'Old' people or 'young' people? Where is your cut off point, 30 years old or 50 years old or 80 years old? And why do you think you know so much about what other people want to watch or learn about?

Rest assured that there is massive opposition to bull fighting in Spain. Spain is not as homogeneous as it is depicted in media. It's actually quite culturally divided among regions, not unlike most European nations.
While in the USA we are entertain by rodeos, boxing and mass killing every other day. SO what barbaric nation can allow that or the dead row? What top nation now goes and invade another country and killed over 100,000 innocent Iraqi ala Bush and Cheney. SO I rather see the bull gets the shot. Lousy video. No real explanation of what supposedly authentic tapas are. From all I have read they can justifiably be made of anything. Basically they are the equivalent of hors d'oeuvres.
He said that, little snacks for free while you are drinking. It can be whatever, filled olives, little bruschettas, ham (prosciutto, some old ham), antipasto, anything to entertain your stomach :)
And they certainly sound better than the little snacks you get for free here in bars in the US. Sick of chips already.

The tortilla recipe here is a recipe for disaster. 1. You need to peel the potatoes. 2. A cup of oil? No more than 1/3 to 1/2 a cup, just enough to slow-cook the potatoes– you aren't trying to deep-fat fry them. 3. You don't cook the potatoes and onions for eight minutes over medium heat– that's crazy. You cook them over low heat for about 45 minutes without browning the potatoes, until they begin to break down and are very, very, very soft. 4. After cooking the potatoes, leave only a trace of oil in the pan when you cook the tortilla. 5. Whip the heck out of the eggs– use a hand whisk for at least 2-5 minutes.... the more the better. 6. Use very low, evenly dispersed heat for cooking the tortilla, and cook it for much longer than the recipe above suggests.

I have been to Spain three wonderful times and it has by far and away the best food of anywhere I have been in Europe. Better than Italy, Belgium, Germany, and way better than France. Whether a hole in the wall bar or a nice restaurant, doesn't matter the food is fabulous.
If you like everything dripping in cheap, near rancid olive oil it is. A lot of it is very good yes, but a lot is as I described.
I second that as well. I had traveled all over Europe, Asia and many other parts of our world and by far the best food is from Spain and all to die from Those Spaniards are very healthy, they live a long live, are very tall. It has very good white folks and the women are also to die for. in Russia, Spanish women look like models and they even go naked at the beach something that puritan USA would never do. But again, due to the ignorance and poor schooling in the USA, many people in the USA think that tacos and burritos come from Spain too.

Bourdain will eat anything that walks, swims, slithers, or crawls. I'm waiting for him to eat at a Monkee table. They have these in southeast Asia. The barbequed head of a Monkee is secured in the middle of a small table and the crown cut off. The diners then eat right out of the skull..Show that or a cat or dog being eaten and Bourdain will be done condoning these countries exotic appetites..

As much as I admire Spanish cuisine and culture, there is nothing to celebrate about the cruelty of bull fighting. There is strong opposition to it (at least certain types of bull fighting) even in Spain. Food critics should be mindful of the fact that food is not just about how it tastes but also how it is produced. For example, can you tell us to what extent captive bolt stun guns are used in Spain and whether bull fighting is really culturally accepted?

Read the post. It's not saying eating meat or slaughtering animals is wrong. Rather it says that the journalist should say something in his article about whether Spaniards agree with the principle of bull fighting. He posts of photograph of himself with a Matador and tells us that the animal in question will be turned into a tasty meal. Fine, but what does he have to say about the torture the animal has endured to be turned into that meat, as opposed to a farm raised animal that could be killed almost instantaneously with a stun gun? Bourdain is not on vacation. He is not a house guest. but a paid journalist who has allowed himself to be part of a bull fighting event, yet he is conspicuously silent with respect to that controversial issue.
I'm not a vegetarian but that does not mean I don't care about proper handling of livestock in meat production.

Yes the "poor" education where the world comes to us for higher education more often than anywhere else except maybe the UK. The same "poor" education system where EVERYONE gets an education not just certain classes. Is it the best education system? Probably not, countries that have smaller populations and less socially and geographically diverse populaces have it far easier when it comes to educating. However i am sick of hearing "china is beating the US in education..." Sure, maybe a few at the top but half of their children get no education and work manual labor from age 10... Just an example...
China is no a top nation but a developing nation and for the most part their education is better than in the USA. But when compare to Europe, Canada, Japan we we are way below.
