It wasn't apropos of nothing. A few months ago, Andrew Zimmern spoke with our Sarah LeTrent about the importance of eating invasive species like nutria - a giant water-dwelling rodent - in an effort to tap into new food sources, while reducing their impact on the environment. Chefs say it tastes like rabbit, but admittedly, it's got something of an image problem.

“You start to stretch our food imagination, we can take it in sorts of great directions,” Zimmern told LeTrent. It remains to be seen how that particular specimen will be stretched, but we trust it will be delicious. And documented.

He's also been known to stump for donkey meat and flash cellphone pictures of squirrel testicles. He is our hero.
