Agreed. Servers & counter help often aren't trained correctly as to how to deal with people's requests for removal of food items. For example, I once asked a server to leave onions of my sandwich. The first thing he said was, "Are you allergic?" I asked him if it mattered and he backed off.
It's nobody's bloody business why I want what I want. They should always as s ume their customer is allergic because, ya know something, maybe they are.
I see your point, but it actually MIGHT matter.
If you are allergic to onions, it would be important for the cook not to use the same knife to cut your sandwich if it's used for other sandwiches containing onions. They would probably also need to use a different cutting board. Those are important steps for safety in the case of a severe allergy.
If it's just a preference on your part, then switching knives or cutting boards would be an unnecessary inconvenience in a busy kitchen. Of course, you should still get your sandwich the way you want it.
