Preserving Cuba's cuisine, one pig at a time

Patrick Oppmann is CNN's correspondent based in Cuba and a barbecue enthusiast.

Cubans may live surrounded by water but the food that incites the most passion and culinary debate does not swim or slither. That honor is reserved for puerco asado, pork cooked over coals in the traditional style of the Cuban countryside.

As with many Cubans, Anselmo “Don” Bello swears on his honor that he cooks the best puerco asado on the entire island.

But unlike most of those other would-be top chefs, Bello’s phone rings off the hook each day with people asking him, pleading with him for one of his whole cooked pigs.

“Most people don’t know what a real Creole meal is,” Bello said, referring to the term for the Caribbean’s jumble of European and New World cultures. “The taste of the seasoning, the oregano, the onion, garlic and bitter orange. That’s been lost but we are rescuing it.”

Don Bello is leading his crusade to save Cuba’s culinary traditions in San Antonio del Rio Blanco, a small, country town, an hour inside of Havana.

Next door is the Habana Club Rum Factory and Bello uses leftover barrels as charcoal to cook his pigs. The rum-drenched wood, he claims, is just one of his many secrets towards creating the smoky and tender pork he serves clients.

Along with his love for Cuban cooking, Bello carries something else in his blood: a knack for business.

His nickname - Don Bello - translates to “Sir Gorgeous,” but the prettiest thing about this short, paunchy vendor is his unrelenting, bantering salesmanship.

With the zeal of a boxing promoter hawking a title fight, Bello will talk a visitor’s ear off. He boasts about the care used in raising the pigs, how his ingredients are all natural or about a new promotional gimmick he has thought up. And then his cell phone interrupts with a call from another client.

Only two years ago Bello’s business would have not only been unthinkable, it would have been illegal. Facing a stagnant economy, Cuba’s leaders shifted policy and allowed some private enterprise to take root in the officially socialist country.

Businesses like Don Bello’s both take people off the government payroll system and supply badly needed taxes to the government.

Don Bello charges about $80 for the pork meal that can feed 20 people. The spread includes rice and beans, fried plantains, homemade cake and tender yuca.

“This is typical Cuban food, simple food, the kind you share with your family,” said Ernesto Diaz, a Cuban who lives in Miami and asked Don Bello to cater a meal for his family during his first visit back to Cuba in five years.

Don Bello employs a staff of five who work out the back of his home, among them are his wife Jenny and daughters Brianna and Brenda.

The mammoth charcoal-burning oven Bello uses can fit ten pigs. As the number of orders keep growing, he is planning on building a second oven.

“You are a slave to the business, there are no days off,” Bello said with a wide smile indicating that he actually relishes his newfound success and the headaches that come with it.

Even with the change in legalities in Cuba, entering the once forbidden private sector is no easy task.

Access to ingredients can be irregular at best. Then there is the issue of how to get the word out about his new business in a country where nearly all media is state-run and devoid of advertising.

Bello started by employing promotional flourishes like putting small straw hats on each pig and a Cuban cigar in their mouths. He handed out colorful business cards with each delivery he made.

Word of mouth slowly began to build. In December, Don Bello was invited to show off his cooking on a national TV show, one of the first private entrepreneurs to receive that level of official publicity.

The appearance paid immediate dividends. “It was one for the history books,” Bello said. “I got over thirty calls that day. People were calling like crazy to order. And once people order once, they keep coming back.”

Now, Bello receives calls from outside the country, from Cubans living in Miami and Las Vegas wanting to send a special meal to relatives back home.

Bello tells them to arrange to send the relatives the money for the feast the only way they can - via Western Union - and then gets cooking.

“Maybe they needed a pair of new shoes,” he said. “But that day, they ate pig and rice and beans and really enjoyed themselves.”

    We must not forget the human race evolved because our early ancestors had meat diets; our early ancestors' brains evolved mainly due to eating fatty organ meats of animals – this is a scientifically proven fact! We must not ignore what we are really made of...
    And yes, our highly evolved and civilized mind will 'tell' us to show compassion to other living (and moving) things and not to kill them but we should not forget how we got this highly evolved brain (and sort of ridicule people who continue eating meat)!

    My parents are from that small town (San Antonio del Rio Blanco) in Cuba and we continue the tradition here in Miami Beach by cooking an entire pig every year on Christmas Eve. It is the one meal a year that I most look forward to eating.

      Make a semi dry rub of salt pepper garlic and oregano. make it a paste with 1/2 lemons and orange. rub this on the pig and leave over night. Cook very slowly over 6 hours and enjoy. I've roasted dozens of whole pigs. Always plenty to give to the neighbors.

    Thank you for sharing that vivid image of animal cruelty. It's nice to know that while CNN does a great covering news impartially (unlike Fox), you still a few dimwits working in your organization, which believe this kind imagery serves your interests well. My father is Cuban, I'm a vegetarian. Maybe I'm too sensitive, but I fail to see the point in this type of media. Whether it's a Cuban with a pig or a dumb redneck that machine gunned a deer, or some bozo rockstar like Ted Nugent shooting bears and posing for photos. I don't like it and I think it brings publications down. But I digress. The world is full of stupid people, so I guess catering to them is a good market for you.

      Why do you automatically assume that his daughters are minors? They could easily be 18 or 19 years of age. You also assume that it isn't a commercial kitchen, without knowing anything about it. Any oven that can handle 10-pigs at a time would be classed as commercial. Just because it is in the back of his home, doesn't change that fact. It seems to me that you are one of those people who just can't bear to compliment someone's entrepreneurship. Usually people like you are failures in their own lives, but that's just an 'assumption' on my part.

      Nice sentiment, but unfortunately it's hard for an "entrepeneur" in Cuba to rot the socialist nightmare when the socialist government controls who can own a business. In Cuba, you MUST be a communist to have the privilege of a local or regional monopoly. They'll keep it as a monopoly because the market is tourism and the government elite, a much smaller market than locals whose food supply is rationed.

      Think of it as a franchise. If the guy ever speaks a slightly critical word against the government, they'll snatch not just the license, but his business (along with any investment he made) and assign it to someone else.

      This is a typically pleasant CNN piece about Cuban food or cigars or music that fails to really analyze the real problems of the country. It's not that CNN is not smart enough, just that Ted Turner's legacy continues to influence how they color the news. I'm not a Fox fan and rarely consider turning over to them, until I start reading puff pieces like this.

        It's a start, though. And as has happened elsewhere, people will want what Bello has for themselves, and the government will be faced with a choice: clamp down and go back to the old way, or step back and let capitalism happen. Cuba seems ripe for the latter.

      It is ironic that in at least two communist countries (Cuba and China), leaders have had to resort to permitting some level of capitalism to stave off economic collapse. Unfortunately, doing so will not "rot out" socialism from the inside. Communism will continue to be the way of governance as long as those in power maintain their oligarchy, holding onto consolidated power and enjoying a higher quality of life for themselves, regardless of how it badly it harms and subserviates the masses. Ironically, the very thing Communism professes to opose in capitalist societies. While I think the Cuban embargo is idiotic and accomplishes nothing positive, Communism will continue to be the form of oppression that it is until and unless enough people rebel against it, ala the former Soviet Union.

          Thinking Things Through and pacman357 have it right...until the dictatorship loosens its grip on the people, media, courts and property rights , you can have all the "capitalism" you want and nothing will have really changed because people wont be able to own what they work for, speak out against their "boss" the government, get a fair trial if they do speak out, get impartial media coverage when they're they're treated unfairly by the courts for speaking out, and that means others wont know and thus wont be able to protest the injustices....which they wouldn't do for fear of retribution anyway. It's a sick system. And by the way, it's more than a little annoying that the PETA people and vegetarians are more concerned about the pigs than the Cuban people themselves who are starving. They've been on a vegetarian diet for decades and some risk their lives over the channel to have the choice of animal protein at least once in a while.

    I am NOT a vegan, but I will say the guy does look very douchbad posing next to a burnt pig. I mean, what if he posed next to a burnt puppy or cat? It just looks very douchbag like. I really would not mind if he fell into the fire too, and people ate his crsipy body. Some people in the world DO eat human meat....or do you draw the line there??

      Yes. I do draw the line there. A pig is mean to be roasted over a fire. So is a dead cow. Although, I am not for it, not in the least bit, if someone eats cats/dogs, well so be it. They are eating it, not me.

    I would imagine that Cuba is free of the crazy "white pork" that has been bred in the U.S. Having real traditional, fat pigs gives Cuban cooks a real leg up on the rest of us who are forced to cook pigs that taste like chicken breasts.

    I long for the day when the U.S. supermarkets will start selling real rig meat again. But it will probably never happen. Shame the specialty places charge way too much for the Berkshire and other heritage pigs.

      See if you can find a local farmer's market, and strike up a relationship with the pork guys who sell there. You can usually buy direct from the farm as cheap or cheaper than at the supermarket, and you'll know exactly what you're getting. You may have to buy a whole or half pig at a time to get real savings, but they'll usually butcher for a nominal fee, or you can learn to do it yourself. Sadly, it's the only way to get really excellent pork these days, but it isn't impossible and it doesn't have to be expensive.

      As SixDegrees said, find a famer via a farmer's market. But one reason heritage pigs are hard to come by at a cheap price is that they're not feedlot confined, and their foods aren't subsidized (or minimally so).

      Human Beings are animals, and are part of the overall food chain. As Omnivores, we eat not only meat, but plant foods as well. Our bodies have evolved over the millennia to subsist on a wide range of diets. Some humans subsist almost completely on animal based foods (eskimoes for , while others eat a largely plant based diet. Overall, Humans have replaced most other predators at the top of the food chain, and aside from the farmed animals that we raise for consumption, human hunting is actually critical to maintaining the health of wild animal populations such as deer, particularly in areas where large predators have been removed from the environment. Making everyone a vegetarian would cause many animal populations to become explode, and disease and starvation would inevitable follow.

      If you choose not to eat meat, so be it. But spare the rest of us your pollyanna-ish whining about how terrible we are for taking part in the natural cycle of things. If anything, your refusal to be part of the globa ecosystem is more intrusive than anything we meat eaters can do.

      Look up Caja China in Hialeah Florida. They sell a whole pig coal cooker that knocks down. Your problem is going to be finding a whole pig of about 40 pounds to cook.
