I’m not an excellent baker. I am, however, an excellent aunt - so I like to be prepared with a project when nieces and nephews come to town.

Today’s project: peach cake.

    and we happen to have a box of fresh picked peaches soooo it worked out great!

    First of all, some of you need to relax. I have made cakes from scratch, and I have made some from a box. Some box mixes are quite good, and are not all laden with preservatives. Get off your high horse. Second of all, the First Amendment is not implicated here. No government action or censorship is involved, so no Constitutional issues. Third of all, this lady went to the effort to pick peaches, make a tasty cake, and tell us all about it. You ingrates who complain should go start a blog of your own if you have such important things to say. And, no, that's not a first amendment violation for me to say that. Knuckleheads.

    Peaches are great in colors, shapes, scent, touch and in taste. Imaginations and instincts keep informing us there are something far better than peaches somewhere in different dimentions... Maranatha!

    Cooking and paiting and writing( and of course other activities as well) have a lot in common. You need a lot of kinds of ingredients in right amount/balance to express the mastery result and the timing or tempo in the process is crucial. It keeps the humans on quest keen.

    I'm not for cakes with baked fruits. Nothing can beat the taste of freshly picked fruits. The Creator's gifts. There are fruits in Heaven yet unknown to the present mankind. Jesus gives us true fruits that we are designed to eat and enjoy. Fruits on earth are mere foretasting of something that are in Heaven.

    This looks great! Blueberries would be fantastic, but think twice about fresh strawberries. They'll just go mushy on you, fresh strawberries are kinda nasty in baked goods for some reason.

        Unfortunately it doesn't chop very well and would be difficult to use in this format. Now, if you would like to make a sauce or ice cream in durian flavour then go right ahead and post a picture.

      Agree – baking strawberries usually produces something nasty. Pre-sweeten & cook rhubarb to cook in the cake and then top with strawberriers.

      Raspberries would bake better – or top the peach cake w/ raspberries for instant melba. Cherries would bake very well. Pears should work – they just couldn't be rock hard. Apricots would work. I'm actually wondering about mandarin oranges after the previous suggestion about pineapple.

      And for the box-mix-haters – go look in the store sometime, there are several options that are no different from what you use for your dry ingredients – no chemicals or other nasty stuff. It's five minutes from cuboard to oven and there's one bowl, one cup, and one whisk to wash up. For days where I have 10+ minutes to put something together from scratch, I do it for the same reasons that you do. Just don't automatically dismiss all mixes as evil and label all of their users as lazy.

        Obviously you haven't much experience with this fruit because what you said suggests you've never even tried to cut into one much less taste it. It is very much perfect for this format.

    Try using those peaches to make ice cream:

    3 ripe peaches, peeled
    1.5 cups 2% milk
    1 cup sugar

    Spin it in the blender until smooth. Churn it according to your ice cream maker's instructions. You're done. Best tasting peach ice cream ever!

    Generally, if you would toss the fruit in flour before adding, it help to keep the fruit pieces from sinking in the batter. ...thinking apple cake (with applesauce) sounds pretty tasty! But who wants to bake when its SSSOOOO HOT and HUMID! Be wonderful this fall.

    I bake, cook, everything from scratch – EXCEPT cakes. It seems to me that if technology can box the cake – how stupid to mix up one? And the box ones taste better than most cakes you can make from scratch!

    Love the adding iced tea instead of water to the batter! YUM! Bet you could do it with a lot of different liquids – Lemonade, comes to mind, too!

    I use this same recipe with a Rhubarb Cake...big frick'n deal that it comes from a box. I work and have a life. be happy that I even was nice enough to make it and you loved it. *dabs face with flour

      Go through through the images and it gives the recipe. I'm going to try this one. Sounds easy and fun. I say top it with warm peaches, crumbles, and whip creams. I have to do this one.

    Why not just make a batter? It takes five minutes and a few ingredients. Boxed caked mix is gross, full of chemicals and preservatives, and tastes generic. Lazy. No one cooks and bakes anymore; it's pathetic.

      Seriously, it sounds like you picked one too many crappy cake mixes in your life... some of them are really good, you know, and I love to bake. You might want to invest in a good chocolate bar, and take a big bite next time you are tempted to use insults and name-calling on a food blog about cake. G'day.

      I agree. I recently tasted some cake made from a package mix, and it was really gross, probably because of all the chemical preservatives. Baking from scratch only takes a little longer but tastes so much better.

      @Seriously – ignore all the negative comments. You make a great point about packaged cakes not tasting that great, plus the preservative are not healthy. It's a terribly sad world when a person cannot express an opinion without everyone else condemning that person for daring to disagree. You people need to re-read the Constitution – our founding fathers valued freedom of speech so highly, they protected it under the 1st Amendment. Let Seriously have her say. Honestly!

    My mother made this cake when I was growing up and I have done so since – 40+ years. She learned about it in her high school home education class back in the 60's. The peach cake is the best though you can do this with apples and the berries too. The juiciest fruit should be used so that the flavor gets into the cake. Refrigeration is necessary as the cake tends to be very moist and mold will sprout quickly. You can heat up the cake slice in the microwave and enjoy with ice cream.

        I make a blueberry version (from scratch) that is very similar to this... I suspect that blueberries or other whole berries will work very well. Strawberries work OK with mine but not as well as other fruit.
