Our favorite (shhhh!) Top Chef All Stars contestant Richard Blais thinks standard Super Bowl snacks are a tad tame. In the debut of his weekly segment on our Senior Junk Food Correspondent Ali Velshi's show, he amps up sweetbreads, cocktails and so much more for a game day feast that's out of this world.

I strongly suggest that you issue a warning regarding the hazardous nature of this technique!!!
While watching this margarita technique, I envisioned the partiers deciding after a couple (or more) beers that this would be a cool trick. Next I see several fans standing around the mixer while one pours liquid nitrogen into the mix. I noticed that neither you nor the chef was wearing protective gear – not even eye protection. Liquid nitrogen is notorious for splashing, so by half-time, it should be expected that some small number of your encouraged viewers will dump the LN2 too quickly or erratically and cause a splash. A drop or two of liquid nitrogen ( -321 degrees F) will instantly freeze some of the human tissue (think eyeball) with which it makes contact. This is hazardous material for which OSHA has guidelines.

I would say that football in general is more about the experience that it is the game. Unless you are a die hard foodball fan.

I agree – definitely not practical. If someone is having a Superbowl party, what they serve will depend on the host (how good a cook) and the guests (how adventurous are they food-wise). I think there are some folks that will never serve anything but bagged chips and packaged dips because that's the extent of their abilities and/or imagination.
The Superbowl in and of itself is all about football. People who have parties to watch the Superbowl are into having a social event. That's the difference.

Since I have to work on Super Bowl Sunday, and I work in electronics sales, we're always looking for ways to get more people up to the department to check things out. Now, I wonder if I can get the company I work for to spring for an immersion circulator and a liquid nitrogen tank...
