Pssst! Got a sec to chat?

We are utterly thrilled when readers want to hang out and talk – whether it's amongst themselves or in response to pieces we've posted. We want Eatocracy to be a cozy, spirited online home for those who find their way here.

Consider the daily Coffee klatsch post as your VIP lounge – the primary comments thread for readers who'd like to chat about topics not related to the articles we're running. That way, everyone knows where to find each other, and each post's comments section remains on topic.

advice: word verification is awesome, that will keep on spam. if you add the mod first feature it can block some people from people able to post...not sure why but it happened to me after I got a not so friendly visit. blogger makes it rather easy to edit/delete unwanted comments and they also flag comments that set off red flags. i have been using them since april for my food blog and it has worked well so far!

    Here goes, people....

    Jalapeno Jelly Recipe

Sterilise 12-8 oz. jelly jars and lids. I wash the jars and then sterilise in a 225 degree oven for 15-20 minutes, keeping the jars hot until filled.

4 (+) cups of minced jalapeno peppers (Mince by hand for a better presentation. Do not use a food processor.)
    3 cups apple cider vinegar
    11 cups sugar
1 pkg (containing 2 envelopes) of Certo liquid pectin
1 pkg (1 envelope) of Surejell powdered pectin

Combine vinegar and sugar in a large pot and bring to a boil. Add pectins and jalapenos and bring back to a boil for one minute. Remove from heat. Fill jars leaving about 1/2 inch of head space in the jars. Wipe the tops of the jars and seal.
If done properly, and jars seal, the jelly will be shelf stable and able to be kept in the pantry. This recipe will make more than 12 jars. Any extra can be kept in an extra jar or in tupperware in the fridge for a couple of weeks.

You can vary the peppers used in the recipe depending on your personal preference. You can use jalapenos, fresno chile, etc. Jalapenos and red fresno chiles are a nice touch, if you are using the jelly for holiday gift-giving. Also, you can vary the amount of heat in the jelly by seeding and de-veining the chiles. I personally like the heat and will often leave some of the seeds and veins on the chiles when mincing for a spicier jelly.

    Happy cooking everyone!

I forgot to mention that the jelly will set up over a few days. The first couple of days it will seem a bit runny, and it will never be the same consistency as most jellies/jams. It should be just a little underset. Try serving it over a brick of softened cream cheese with good crackers. It's awesome!

#2. minimum of 4 hrs, smoke time outside.
#3. preheat inside oven to 225 to 250-remove brisket from grill and spray it down with pineapple juice. Double wrap it in Heavy Duty aluminum foil ,place in a different pan and finish cooking inside.

If you dumpster dive you have to stay outside ALL the time. If you want to come INside and sleep in a nice cushioned crate then NO diving into the trash dumpsters.

      Non-negotiable rule.

I am an avid chair dancer! I live for the loud tunes, the confused pedestrians, and scandalized drivers at lights. And GAGA is especialy good for it. My new fav, though, is " Hold it aginst me" by B-Spears. I shook it all the way to work this morning.

There is a whole family of wild turkeys in our backyard. They are strutting around with their black glossy feathers looking like a bad-azz motorcycle gang. I'm going out to pet them. They are quite tame when they know you have some food. I've got some dried corn and a little leftover cornbread. Let's see if they will eat. Then I'll feed the rest to the catfish under the dock nesting in the old Christmas tree. Gotta watch those spiney things. They will poke you. White bread is what they like the best.

We got some brisket from New Braunfel's that was tasty. Along with some smoked pheasant and bacon. Their sauce is very good. Pretty Texas-tasting considering it comes from New England. They cob smoke stuff, too. I tried cob smoked trout on the Big Green Egg and it was so sweet. My grandfather used to cob smoke his hams. They weren't as pungent as some smoked hams but they were very good nonetheless. I'm really getting into smoked seafood. Smoked oysters and shrimp, salmon and trout. Even smoked salt. That stuff is good. And a smoked sweet potato is great. Smoked little red potatoes work well in potato salad.

I am a blue bleeding Democrat and still dont know how our resolve and spirit can pull us back from trillions in debt...We've placed ourselves in a position where, unless we make drastic chnages, we will be insolvent. Sorry for acting so pejoratively. (WOD!)

I am so far right, I can make Reagan look like a fan of the New Deal and I completely agree with you. The other aspect that nobody seems able to address yet is the fact that 86% of the federal budget is SSI, Medicare and other items that cannot be touched. That does not leave much room for cutting aside from raising taxes or even the prospect of a currency devaluation. Not a pretty picture.

Absolutely correct. And the prospects of growing our way out of it are so slim so as not to even be a consideration. Just wait until those folks holding our tbills start demanding higher interest rates.

There are people who have passed away who's families are still cashing their checks. Fraud is RAMPENT in medicare, and no one prapared for the boomers ( no offense to anyone! ) to be leaving the work force because all the money they paid in has been borrowed. *steps off soap box*.

oh, and to add to the address conver above.. i watched it out of the corner of my eye. and i couldnt get enough of Boehner's facial expressions... he clearly has little respect for what the man speaking had to say. the shots of the politicians at their seats was a bit telling also. i like how he brought up the fact that in OTHER countries teachers are held high in regard...but in OUR country they're one of the lowest paid and least respected professionals. and he addressed that in no way, shape, or form. when he does something about THAT i might believe a smidgen of what comes out of his mouth.

SERIOUSLY.

The holo-communicator was a new advance in Federation communications technology in the 24th century. It allowed two parties to converse as if in the same room by sending holograms of each other courtesy of projectors installed in the floor.

They were first deployed in Starfleet in 2373 on the bridges of ships such as the USS Defiant and USS Malinche; Captains Sisko and Sanders used theirs for the first time to coordinate their attempt to capture the Maquis leader Michael Eddington. The Maquis had been able to "procure" a holo-communicator of their own, allowing Eddington to use it to contact Sisko during the hunt. As the communicator was installed after the cascade virus that damaged all the other systems on the Defiant, it continued to work throughout Sisko's pursuit of Eddington. A holo-communicator was also installed in Captain Sisko's office on Deep Space 9 at this time, and was used by Odo to communicate with Sisko aboard the Defiant. (DS9: "For the Uniform")

The holo-communicator in Captain Sisko's office was later used to allow him to converse with Rear Admiral Bennett on the matter of Doctor Julian Bashir's genetic engineering. (DS9: "Doctor Bashir, I Presume")

Kurros of the Think Tank used a similar technology which created an isomorphic projection of himself aboard the vessels of potential clients. The projection was sophisticated enough to taste beverages. (VOY: "Think Tank")

Shinzon used a holo-communicator to demand Jean-Luc Picard's surrender in 2379. His device was more advanced, however, as it was able to be projected into an area without holo-emitters and it was impossible to trace the signal back to the Scimitar. (Star Trek Nemesis

I tend to be cynical. I don't see how we can do much of anything with 14 trillion dollars in debt. The old American can-do spirit can only do so much. I think the best way out is a complete overhaul of the tax code. Everyting goes and you wind up with reduced rates for everyone and more revenue for Big Brother. But, that will never happen.

        January 26, 2011 at 9:19 am | Reply
      • Truth@Jerv

I really agree. Not only is the debt going to result in higher taxes, but I really think it will stifle growth for decades to come. Add that to the fact that America really does not manufacture much any more and I fail to see the way out. As a nation, we tend to feed and entertain ourselves and not much more.
