December 6 is National Gazpacho Day, which seems somewhat counterintuitive given the cold weather conditions - but what they hey, we'll take the polar bear plunge. Touted as one of the healthier ethnic cuisines, Spanish gazpacho is typically a tomato-based cold soup made with puréed and chopped raw vegetables. There are other variations, like “Next Food Network Star” winner Aarti Sequeira’s White Gazpacho, made with cucumbers, grapes, almonds and yogurt. I'm about (I think) an hour and a half away from you and it is freezing here in Richmond. My dam n feet are still cold from the parking deck walk this morning. Have a hard time diggin' on winter weather.
We hit 15 last night in the MHC, but I like it that way. Snuggled with my bride under the down comforter while the feline purred away. Had a little scraping to do this morning on the car, but nothing major. Nice time of year out here.

I make mine with lots of bell peppers - red and green, as well as tomatoes, cucumbers, and whatever else I happen to have on hand that's fresh. My secret, though, is to use low-sodium V-8 instead of tomato juice, and throw in some hot sauce at the end.

Weekend was good. Hope yours was the same and that you and WD enjoyed it. Did a little xmas shopping for my bride and spent Sunday with her. Saw the 'Boys come through and could not believe my eyes. Not a fan, but I love a good exciting ending.
