Definition: The curd of the milk of an animal after the liquid whey has removed. Cheese comes in many different varieties, depending on the type of animal whose milk was used (cow, goat, sheep, etc.), the consistency of the cheese (soft, semisoft, hard), how old it is (unripened, aged) the region it's from, and whether it's been treated with special molds or bacteria (as with blue cheeses and Swiss cheese). Certain types of cheeses, such as ricotta, are made from the whey rather than the curd
