Definition: Otherwise known as legumes, these typically protein-rich seeds of a certain family of flowering plant form an important part of most diets in the world. Some of edible beans used in cooking include lima beans, pinto beans, peanuts (technically a legume, not a nut), soybeans, peas (technically a legume, though typically categorized separately), lentils, chickpeas, runner beans, greenbeans, broad beans, pigeon peas, mung beans and azuki beans.
